We have a new bloggie!

We are proud to announce that we have a new bloggie. Mommie made it for us 'CCause we said that we needed one. She always mumbles hat we are not allowed to blog on her foodie blog more than once a week thus only for Weekend Cat Blogging. But we tink this is far toooo less for us so we insisted on a bloggie for our own. See! now we have one and are very proud! We will continue to blog for WCB on moms FoodBlog. Additionally we will blog here. We hope you feel welcome and will visit us as often as you like. Please keep in mind: We will have to work on this bloggie in the near future, we'll have to update our blogroll and all the other stuff around here. So in this very moment it's a little bit empty around here... hugs'n'kisses Kashim & Othello

[Weekend Herb Blogging] - Catfish "all in one pot"

whb This week WHB is hosted by Ellie from Kitchen Wench Being in need for some real quick and tasty dishes seems to grow a habit around here :mad: - but well, on the other hand it drives me to be even more experimental at cooking as my cooking habit already is... No time to cook in advance yesterday left me to a very experimental dish today... Let's call it "Catfish all in one pot"

~ 200 gr Catfish
100 gr Panchetta
2 big sweet potatoes
200 gr grean beans
100 ml fish stock (( or vegetable stock ))
3 branches fresh rosemary
salt 
pepper
some ground ginger
juice of 1 lime
</div>

Cut Catfish into ~5 cm. Cut sweet potatoes into not too thin slices and cut beans into 1 cm pieces. 

First place the beans in a casserole then top with catfish, season with salt, pepper and juice of 1 lime. 

Cover with slices of one sweet potatoe. Put the pancetta neatly on top and then pile up with the scond sweet potatoe slices. 

Add the fish stock and cover with the rosemary. Cover with tin foil or (in my case) with a plate.

Manchmal brauchts ein wenig Soulfood und wer kann hier in der Büroküche besser Soulfood herstellen als der Herr Kollege?
Deswegen und weil wir ja auch Hrn/Frl Zweg der Mrs. Q. richtig füttern wollen gabs heute wieder mal die - viel zu seltenen - Palatschinken aus Hrn Kollegens schwungvoller Hand ...  :blush:  :smile:

Was die Palatschinkenfüllungen angeht sind wir ja sehr kreativ und gut ausgerüstet.
zur Standardausrüstung gehören:
Kirsch-, Heidelbeer-, Erbeer-, Marillen-, undwasweissichnochmarmeladen
Vanilleeis
die unverzichtliche Schokosauce 
und letztlich der unentbehrliche "Sprühtopfen" (Hochwald Sahnewunder)

heute gabs noch extraleckere frische Erbeeren dazu  :p:

Mrs.Q. kann nicht nur <a href="http://www.strohmaier.biz/blog/index.php?/archives/73-lehrreiches-baguette.html#extended">leckeres Brot backen</a> sondern auch sehr gut Pasta machen. Dies hat sie heute weider einmal eindrucksvoll bewiesen. 
Leider lässt sie sich nicht dazu überreden auch das rezept bzw. die Zubereitungshinweise dafür auch der Öffentlichkeit zur Verfügung zu stellen. 
Wer also wissen möchte, wie manunser heutiges - sehr leckeres - Mittagessen zubereitet, der möge bitte <a href="http://www.strohmaier.biz/blog/">hier lautstark urgieren</a>!

Unfortunately I had to alter the recipe a bit because some ingredients I could not get on Saturday... There were no sweet potatoes and later I learned that I had no rosemary at home ( please don't ask me where the rosemary has gone... I have no clue at all! )

<center><h2>Orange-glazed chicken, baked potatoes & baby-carrots</h2></center>

<em>For the marinade:</em>
Zest and juice of 2 oranges
1 lime
4 garlic cloves, minced
2 Tbs. vinegar
2 teaspoons finely chopped fresh thyme (( unfortunately I had no rosemary ))
2 Tbs. olive oil
Salt and freshly ground pepper
--
4 chicken breasts with bones
9 small potatoes, peeled and cooked (( I had no sweet potatoes as well ))
Zest and juice of 1 orange
1 teaspoon finely chopped fresh thyme
Salt and freshly ground pepper, to taste

<em>Additionally:</em>
150 gram baby-carrots
Chestnut Honey
100 ml coconut milk
1 orange

For the mariande mix all ingredients together and put in a plastic bag. Add chicken and let marinade at least for 4 hours.

Put the chicken along with the potatoes ans some of the marinade in a roasting pan and bake for about 1 hour.

Meanwhile cook the carrots in the left over marinade until soft. Remove carrots from pan. Reduce remaining marinade until almost gone add some honey and fill up with coconut milk. 
Add 1 sliced orange and let simmer for abot 5-10 minutes.

whb This week WHB is hosted by Rinku from Cooking in Westchester When I saw Kalyn writing about "How to Make Juicy Grilled Chicken Breasts That Are Perfect Every Time" and all those wonderful mouthwatering chicken recipes she wrote afterwards I decided that it was time to cook chicken myself. :blush: With Kaylns really good tips in the post above and my own experimental spirit it turned out to be a very mellow and juicy chicken experience :love:

Trim chicken breasts (( Kashim& Othello loved the trimming part here. For the marinade I used balsamic vinegar, olive oil and my beloved ras el hanout. I marinated the chicken over night. Heat a pan, roast the breasts for about 5 minutes. Add slices of nectarine and roast foranother aprox. 5 minutes. I had some leftover stuffing when I made my stuffed giant mushrooms so I used this as a basic for my tagliatelle sauce. I only added some chicken stock, fresh cocktail tomatoes to the stuffing and let it simmer for serveral minutes. Violá! :;): For the herby part of the dish I added fresh leaves of basil and coriander.

Today I found some giant mushrooms in the supermarket and decided to make some stuffed mushrooms for tomorrows lunch at work.

4 giant mushrooms
2 small zucchini
garlic
salt
pepper
100 gr small mushrooms
1 teaspoon curcuma
1 teaspoon ginger
2 teaspoons <a href="http://www.flickr.com/photos/-caillean-/499984833/">ras el hanout</a> (( It is a read more )) 100 gr blue veined cheese 200 gr creme fraiche fresh leaves of basil & coriander
Giant Mushrooms stuffed with zucchini-mushroom & blue viened cheeseGiant Mushrooms stuffed with zucchini-mushroom & blue viened cheeseras el hanout Cut zucchini and small mushrooms into small pieces. Season with salt, pepper, curcuma, ginger and ras el hanout. roast in a pan for abut 5-10 minutes. Add creme fraiche and - if needed - some water. Set giant mushrooms on an oven proof pan and fill with zucchini-mushroom filling and cheese. Bake for about 15-20 minutes at 180°. Eventually place some butter or olive oil on top of the mushroom - if needed. Pick some freh leaves of coriander and basil, arrange on a plate and set the mushroom on top - then: Enjoy!

Garten-Koch-Event: Rhabarber - Halbzeit...

Garten-Koch-Event Mai 2007Die Hälfte des Monats ist fast wieder rum und damit neigt sich auch der Event (fast) schon wieder seinem Ende zu. Viele sehr leckere Rezepte sind bereits eingetroffen und harren darauf bestaunt zu werden. :;):

Deswegen, schnell noch einen Beitrag für den Garten-Koch-Event Rhabarber kreieren und hier einsenden.

Wer kann diesen Köstlichkeiten widerstehen?

    Sus zeigt uns ihren Rhabarber-Marzipan-Streusel-Kuchen . Marzipan und Rhabarber ... eine süsse Verführung! Ulrike hat einen umgedrehten Rhabarberkuchen gebacken, der gleich von der Gärtnerin für den Muttertag nachgebacken und für sehr lecker befunden wurde. Gabi schmeisst ein äusserst leckeres Rhubarb Crumble ins Rennen, das Crumble Fans wie ich einer bin unbedingt mal ausprobieren sollten. Jan ist mit einer für mich ungewöhnlichen Kreation dabei: Rührei mit Rhabarber nach Michel Roux. Rhabarberhonig gibts bei Andrea in der jungen Küche. Interessanter Name ... lasst euch überraschen :^^: Rike ist mit einem Rhabarber-Aprikosen-Kuchen dabei, der auch sehr lecker zu sein verspricht. In der Hüttenhilfe wurde ein leckeres und sehr gesundes Spargel-Rhabarber-Gemüse gekocht. Eingereicht von Sebastian. Sogar ein englischsprachiger Beitrag hat uns diesmal erreicht: Kat hat sehr leckere Rhubarb Crumble Squares with Orange Zest ausprobiert das wirklich sehr yummy aussieht. Franz verwöhnt uns mit einem farbenfrischen und sehr sehr leckeren Rhabarber-Törtchen mit Ingwer und Vanille. Barbara hat eine Entenbrust auf Rhabarbergemüse gezaubert, die nach fachkätzischer Prüfung verzehrt werden durfte... Mrs. Q. hat sich selbst mit leckeren Kokos-Rhabarber-Muffins verwöhnt, von denen wir diesmal leider nix abgekriegt haben :(
Ich hoff ich hab niemanden vergessen bis jetzt und bedanke mich auf jeden Fall bereits jetzt bei allen die schon mitgemacht haben und hoffe natürlich auf weitere leckere Beiträge *zwinker*

Heat some oil in a pan and roast 2 rosemary twigs. Roast chicken breast for about 3-4 minutes, season with salt, pepper and caraway. Place on a large oven-proof tray and cover with sliced mozzarella. 

Cut tomatoes into halves, roast in same pan as the chicken breasts. Do the same with the red pepper slices. Season with salt, place on the plate and cover with grated parmesan, season with salt and some fresh rosemary. Bake for about 20 minutes at topheat.

Cook potatoes, peel them and cut into halves. Roast in a pan with some olive oil and season with salt, rosemary and parsley.

Megan made a wonderful and heartbreaking tribute to her sweet soulmate and shared it with us on youtube,so we can share it with you now:
It made our eyes wet and we sure know that he will be there watching over his family and his very special person to whom he gave his soul and his entire love. TeaCup is in Kitty Heaven now and we sure know he already met our beloved brother Paul who was our mommys soulmate and she still is crying when she remembers him. You know, all of us cats are special but some are even more special somehow. They have a special mission in their life even if this life is as short as TeaCups or Pauls. We found the Bad Kitty Cats blog a while ago and lost it, now we found it again and again were fascinated by their wonderful stories and funny names... The last few days we learned how much love there is for cats in this place and we immediately began to love this place and this family. Now we are very sad that they have to go through such a hard time and truly hope things willget better for all of them in the near future. Sending all our love, hugs and purrs to the Bad Kitty Cats and Megan! As we already said mommy lit a candle for TeaCup next to Pauls candles, here it is:

When she read the last - not so good news - when TeaCup was still fighting mommy lit a candle :22: and set it next to Pauls :22: candle which is always burning here. She asked him to take care of TeaCup ...

In der neuen Runde im Garten-Koch-Event dreht sich alles um Rhabarber. Was könnte auch besser passen für diese Runde? Wenn man in den letzten Tagen durch die FoodBlogs gesurft ist hat man durchaus den Eindruck Rhabarber sei in aller Munde und Kochtöpfe... Das ist ja auch kein Wunder, denn er gilt ja auch als Frühlingsbote, da er das erste Gemüse im Jahr ist, das im Freiland wächst. Lang ist seine Saison ja nicht, denn meist ist Mitte Juni die Erntezeit dann auch schon wieder vorbei! Deswegen freuen wir - Sandro und ich - uns bereits jetzt auf eure leckeren Rhabarber-Rezepte.

Diese Woche erreichte mich eine eMail von Sebastian aus der Hüttenhilfe. Dort findet gerade ein toller Event statt, bei dem man ganz einfach mitmachen kann. Wenn ich alles richtig verstanden habe läuft das ganze so ab: :
  1. Du suchst dir ein Rezept kochst es bis 21.05.07 nach und machst davon lauter schöne Bilder.
  2. Dann schreibst du das Rezept in einer eMail an Sebastian und legst deine Fotos bei.
  3. Der Gastbeitrag wird dann im Hüttenhilfe Blog ab 22.05.07 publiziert und ein Link zum Urheber und dessen Webseite wird gesetzt.
  4. Eine Woche lang wird dann abgestimmt, entweder wieder per eMail an Sebastian oder per Trackback an denn favorisierten Rezeptbeitrag im Hüttenhilfe-Blog
  5. Zu gewinnen gibts auch was: 3 supertolle Bücher, die mit Unterstützung von Jan Theofel ausgewählt wurden.

Griechische Spiesschen & pikant süsse Birnen

10 Scheiben Schweinefleisch Gyrosgewürzmischung Olivenöl 4 reife Birnen 2 TL Löwenzahnhonig getrocknete Lauchblütenmischung (( enthalten sind getrocknete Schnittlauchblüten, Bärlauchblüten, Ringelblumenblütenblätter, Kornblumenblütenblätter, Bärlauch, Knoblauch, Schnittlauch ))

  1. Schweinefleisch beim Fleischer in max.0,5 cm dünne Scheiben schneiden lassen.
  2. Gyrosmischung mit Olivenöl zu einer Marinade vermischen (( Eventuell etwas Wasser oder Suppe beimengen )) und das Schweinefleisch darin gut 24 Stunden marinieren.
  3. Das Fleisch aus der Marinade nehmen und leicht trockentupfen, dann um die Spiesse wickeln (( wenn man das Fleisch ein wenig dreht beim drumrumwickeln, dann siehts nachher schöner aus - erfordert jedoch auch ein wenig Fingerfertigkeit )) .
  4. In einer Pfanne die Spiesse kross anbraten. Rausnehmen und warmstellen.
  5. Im Bratrückstand die geviertelten Birnen rasch anbraten. Den Honig leicht drüberträufeln. Eventuell etwas von der Marinade dazugeben.
  6. Auf einem Teller mit den Spiesschen anrichten. Dazu passt am besten ein resches Baguette - kurz in Olivenöl/Knoblauch angebraten.

[Weekend Herb Blogging] - Gnocci, zucchini, mushrooms & cheese

whbAwwww, May again! Time is rushing this days... This week WHB is going home to Kalyn at Kalyn's Kitchen! It had to be a quick lunch this friday, 'CCause there was not much time to prepare a meal with lots of chit-chat... we managed to create something tasty though... I really hope that there will be more time to cook during the week soon :mad:

serves 3

3 portions of ready-made gnocci
1 small zucchini, sliced
150 gr mushrooms, sliced
150 ml sour cream
fresh cilantro
salt
pepper
1 small red onion, cubed
1 small clove of garlic 
a few leaves of 
oregano, thyme, basil, parsley
100 gr grated cheese
100 gr cubed ham

Roast zucchini and mushrooms with some salt for about 5-10 minutes (not too hot).

Add gnocci and roast for another 5 minutes.

Meanwhile mix sour cream with all the finely chopped herbs, ham and cheese. 

Put zucchini, mushrooms and gnocci into a casserole dish. Mix well with the herb-cheese-ham mixture.

Bake for about 10 minutes until surface is golden brown.

Kalyn has already told so many facts about cilantro,that I do not really know what to add...
Here in Austria cilantro is not a very common and popular herb and I first herad of it when I watched  one of Jamie Olivers TV shows years ago. 
Back then it was really hard to find cilantro in our supermarkets - only some few markets would sell it.

Donin this post over at Puddys It's a little anniversary this weekend 'CCause it's the 100th time we are celebrating and sharing WCB with each other since Claire at eatstuff.net initiated this wonderful event.
We want to say thank you to Claire 'CCause without her we would not have met so many nice blogs and kitties and we'd sure miss something badly without you all! And we should say thank you to those who kept WCB going when Claire was no longer able to do so: Thanks a lot you lovely kitty bloggers out there! But there is also something that makes us very sad: Over at the Bad Kitty Cats Megan is very sad and worried about TeaCup her beloved littlekitty who is seriously ill and needs all support he can get to get well again! Please send all your positive thoughts and purrs and purrayers to TeaCup. He needs lotta love and positive vibrations! We really hope he'll get well soon. Keep fingers and paws crossed. Lotsa hugs for Megan too 'CCause she has a very hard time too!

Sweet potatoes & minced beef in coconut milk

sweet potatoe and minced beef Since it's Labour Day in Austria and I am not in a mood to go out today - despite the truly wonderful weather outside - I decided to mix and match something out of the fridge... At least that was the plan... but when I tucked my head into the fridge all I came out with was a sweet potatoe and some minced beef along with some coconut milk - not much, huh? But what I came up with was yet another very quick, easy and spicy lunch. Lucky me! :blush: :blush:

<em>serves 1</em>

1 sweet potato
100 gr minced beef
150 ml coconut milk

<em>herbs&spices</em>
salt, cumin, cinnamon, cloves, cardamom, pepper, laurel (( I bought it on the market recently as a spice blend called "<a href="http://en.wikipedia.org/wiki/Garam_masala">Garam Masala</a>" - as I googled I learned that there are many varieties of blends, so I suppose this one is one of them... ))

After about 5 minutes add the sliced or cubed sweet potato,  let roast until lightly mellow.

Add coconut milk and stir in the spices. Season with salt if needed. 

Reduce heat and let simmer until the potatoes soaked up nearly all of the coconut milk.

I seasoned it additionally with some dried blossoms of chives, ramson, marigold and cornflower.

The spices go very well with the light sweetness of the sweet potato and the semi-sweetness of the coconut milk.
The  light smell & taste of cinnamon and cardamom is not too present and supports the "mellow-iness" of the potatoes.
