[Weekend Herb Blogging] - Ginger

weekend herb blogging This weeks WHB is hosted by Chris from Mele Cotte. Don't forget to look out for the recap on sunday/monday... I always have some fresh ginger around. I lkie to cook with ginger and always have some slices on hand to add to my drinking water... Some time ago I discovered a tiny sapling. So as the whole ginger wasn't that fresh anymore I decided to give it a try and stubbed it into a flowerpot... to see how it would develop.

Now, this is how it developed after ~ 2 weeks: IngwerpflanzeIngwerpflanze Ingwerpflanze This is how it looked like 2 weeks before: BüroingwerBüroingwer BüroingwerBüroingwer
I did some research on ginger itself and found out:
ginger plantBotanical Name :- Zingiber officinale Linn Indian Name :- Adrak, Inji, Adu, Allam, Adhrak Ginger, like cinnamon, clove and pepper is one of the most important and oldest spices. It consists of the prepared and sundried rhizomes known in trade as 'hands' or 'races' which are either with the outer brownish cortical layers intact ('CCoated' or 'unscraped'), or with outer peel or coating parially or completely removed. Some grades of ginger are bleached to improve their appearance. According to available historical records, ginger was certainly known to and highly esteemed by the ancient Greeks and Romans who obtained this spice from Arabian traders via the Red Sea. It was introduced into Germany and France in the 9th century and to England in the 10th century. Ginger requires a warm and humid climate. It is cultivated from almost sea level to an altitude of 1500m, either under heavy rainfall conditions of 150-300cm or under irrigation. The crop can thrive well in sandy or clayey loam or lateritic loam soils. Young ginger roots are juicy and fleshy with a very mild taste. They are often pickled in vinegar or sherry as a snack or just cooked as an ingredient in many dishes. They can also be stewed in boiling water to make ginger tea, to which honey is often added as a sweetener; sliced orange or lemon fruit may also be added. Mature ginger roots are fibrous and nearly dry. The juice from old ginger roots is extremely potent and is often used as a spice in Chinese cuisine to flavor dishes such as in seafood and mutton. Some people are allergic to ginger. Generally, this is reported as having a gaseous component. This may take the form of flatulence, or it may take the form of an extreme constriction or tightening in the throat necessitating uncontrollable burping to relieve the pressure. source:

[Weekend Herb Blogging] - Lime chicken salad with tarragon

weekend herb blogging This weeks WHB is hosted by Kalyn herself could you believe a month is over again? Last week, when I was hosting WHB for the first time I didn't get to write up my own WHB post. This week everthing is much more relaxing. I loved hosting WHB and had a real great time! Last week Kalyn made chicken salad with tarragon and peas. This looked so yummy I simply had to try it myself. So this weeks contribution is an adaption of Kalyns recipe.

Lime chicken salad with tarragon

2 large boneless, skinless turkey breasts 1/2 tsp. poultry seasoning 3/4 cup chopped radish 3/4 cup chopped red onion 1 cup frozen peas, thawed and drained well french tarragon salt and fresh ground pepper to taste Dressing: 1/2 cup mayonnaise 1 T fresh lime juice 2 tsp. Dijon mustard
Weekend Herb BloggingDiffering from Kalyn I used turkey instead of chicken and radish instead of celery 'CCause Mrs Q. doesn't like celery. I also substituted lemon with lime cause I like lime better. I didn't cook the turkey but seasoned it and roasted it in a pan. Apart from that I think I followed the recipe :^^: Oh wait - no! We also used cooked potatoes to make it a more filling dish for lunch. Arranged on a plate with lots of fresh rocket and field salad it looked like this and tasted very very yummy:

I love when she pets my face and rubs my ears and I love to give her sandpaper kisses.

[bbd] #01 - Flowery Cornbread

breadbakingday #01 - bread with herbs Lovely Zorra announced a new monthly event: breadbakingday Now I am not a very good breadbaker at all but sometimes I lke to give it a try and sometimes the result is even not so bad :^^: I recently bought cornmeal and always wanted to try to bake bread with. I've never eaten cornbread before so I was very curious how it would turn out. While looking for a propper recipe I found one at kochtopf and stumbled acrooss the bread baking day again so I thought I might contribute the resulting bread. I don't know if zorra will accept flowers instead of herbs for this month' theme - we will see...

Flowery Cornbread

I used Zorra's recipe as basis for this bread:
250 grams spelt flour 75 grams wholemeal spelt flour 175 grams cornmeal 1,5 teaspoons dry yeast 8 grams salt 280 ml water (250 g water) 1 tablespoon olive oil 1 tablespoon chestnut honey 2 tablespoons milk 1 teaspoon dried sunflowers 1 teaspoon dried calendula 1 teaspoon cornflower 1/2 teaspoon ground cinnamon 1/2 teaspoon ground cloves 1/2 teaspoon ground ginger 1/2 teaspoon ground vanilla sesame
Sponge Stir dry yeast into some hot water let rest 'bout 5 minutes. Mix the flour in a bowl, pour the yeast and half of the water into the middle and carefully add some of the flour. Let rest 20-30 minutes until surface gets bubbly. Dough Add remaining ingredients and knead the dough until smooth. Form a ball. Set ball in a bowl and let rise for about 2 hours (it should double it's size). Carefully flatten dough on a floured worktop and fold 2-3 times. I streched and folded the dough 4 times and let it rise between for about 30 minutes. Divide dough into 130 grams lage pieces (should make 6 pieces), let rest ~10 minutes. Form pieces into oval rolls. I rolled them up again and arranged them in a circle on a baking sheet. Cover them and let rise again for about 1 hour. Preheat the oven to 210°C. Brush bread with some milk and sprinkle with sesame. Bake for about 30 minutes. I placed a bowl of water in the oven and sprayed some water into the oven during the first 10 minutes.

[Waiter, there is something in my ...] - oh my god - dumpling!

WTISM O my god, did she really say dumplings?!?!? I am Austrian, we are supposed to be good at making dumplings. I am good at eating dumplings. Honestly! I love them, I grew up with them. But I hate making them. They never turn out the way they are expected to! Dumplings simply hate me. When Johanna announced the new challenge for WTISM I first thought: No I'll not attend this time. I can't. I won't. But then - after a second thought - I wanted to succeed!! I carved victory over those dumplings... Aye - see yourself whether it was a victory or a total disaster:
At this point I didn't have to think twice what kind of dumplings I would do. Having my roots in the lovely countryside of "The Wachau" (my hometown is Krems) it was quite clear that they had to be "Marillenknödel" because apricots is a fruit The Wachau is famous for.
The Wachau was the second World Cultural Heritage for in Lower Austria and is covered in detail in an own section of "sightseeing". In brief, the Wachau is the region running along the Danube over a length of some 30 kilometres. Despite of its relatively small size, the Wachau area contains some of Austria's premier attractions; it was the centre for medieval culture during the days of the Babenberg reign and played a key role in mission work and counter-reformation. This importance is reflected in the mighty baroque monasteries of Melk Abbey and Göttweig Abbey and the church and castle of Dürnstein. Another important aspect of the Wachau is the wine culture, which made the towns and villages prosperous.
But on the other hand one part of my family originates from another part of Austria: Waldviertel which is known for their extensive use of poppy seeds and potatoes. So one of my Grandmas would make her Marillenknödel covered with a dough mainly consisting of curd and the other Grandma would do it with lots of potatoes. I love both, you can count on that! So I decided to do both. Am I brave or am I brave? :^^:

Marillenknödel aus Topfenteig und Mandelbrösel

Dumplings filled with apricots covered with curd dough
250 gram curd 100 gram spelt semolina 50 gram spelt flour 1 egg 1/4 teaspoon salt 1/8 teaspoon galangal
Mix all ingredients together and let rest for about 15 minutes. Flatten 1 tablespoon of the dough in your hand and cover 1 apricot with it. Cook in water with some salt ~ 15 mnutes. Note: dumpling is well done when it "swims" on the surface. Roll dumplings in crumbs.

Marillenknödel mit Kartoffelteig und Mandelbrösel

Dumplings filled with apricots covered with potatoes dough
1 kg mealy potatoes 250 grams spelt flour 60 grams butter, 30 grams spelt seminola 2 eggs 1/8 tablespoon salt
1. Cook potatoes and mash them. 2. Mix butter with eggs and combine with seminola and salt. Work up a dough with potatoes and flour. 3. Use about 1-2 tablespoons of dough to cover the one apricot propperly. 4. Cook for 10 minutes in boiling salty water, let simmer for about another 10 minutes. 5. Roll dumplings in almond crumbs or poppy seeds.

dumplings filled with poppy seed and jam
250 grams poppy seed 80 grams butter 1/4 teaspoon cinnamon 1 tablespoon blackbery jam
Combine all ingredients together. use 1 tablespoon of poppy seed filling and cover with dough (see recipe above) and form a propper dumpling. cook in salty water about 10-15 minutes. roll in poppy seed or almond crumbs.

Almond crumbs

Roast 40 grams of spelt crumbs and 80 grams grounded almonds with 20 grams butter. Add 1 tablespoon sugar and 1/4 teaspoon cinnamon. Roast until golden brown. Note: Normally you'd replace the apricot stone with lump sugar, but as Mrs Q. does not like her sweets tooo sweet (how peculiar, huh? *wink*) I filled the space with some of the poppy seed filling. It tasted real good with the apricots :^^:

Time to go - Goodbye Buzzerbee

We are thinking of Buzzerbee and his family who have to part today.
The time has come I think you know the Lord is calling so I must go I love you so much; I wish it wasn't so I wish I could stay; I don't want to go The Lord is calling now I must go but before I go I want you to know I know it hurts to lose a friend but I'll always be with you even to the end. poem by John Quealy
